Ingredients

  • pounds ripe yellow tomatoes
  • 3 tablespoons extra-virgin olive oil
  • 3 medium cloves garlic
  • ½ teaspoon fine-grain sea salt
  • ½ teaspoon red pepper flakes

Instructions

  1. Remove the seeds from the tomatoes and chop them into 1/4-inch chunks.
  2. In a cold medium saucepan, combine the olive oil, garlic, salt, and red pepper flakes.
  3. Heat the mixture, stirring occasionally, until the garlic begins to sizzle and take on some color.
  4. Add the chopped tomatoes and any reserved juices to the pan and bring to a simmer.
  5. Cook for a couple of minutes until the tomatoes start to break down.
  6. Remove from heat, taste, and adjust seasoning if necessary.
