Greek Tomato Sauce

Ingredients

  • 2 tbsp olive oil
  • 1 large white onion, roughly chopped
  • 4 cloves garlic, roughly chopped
  • tsp sea salt
  • dash black pepper
  • 1 tbsp oregano
  • 1 tbsp basil
  • 1 tsp Simply Organic Cinnamon
  • ½ tsp clove spice
  • 3 large bay leaves
  • 1 tsp red pepper flakes
  • 3 cups ripe fresh tomatoes, assorted
  • 1 tbsp brown or white sugar

Instructions

  1. 1. Heat olive oil in a large skillet or pot on medium heat. Add the onions and garlic, cooking for about 5 minutes while stirring to avoid burning.
  2. 2. Add the salt, pepper, oregano, basil, cinnamon, clove, bay leaves, and red pepper flakes. Stir to coat the onions and garlic, cooking for another 3 minutes.
  3. 3. Add the tomatoes and sugar, stir to combine, and reduce heat to low. Cook for 15-20 minutes.
  4. 4. Allow the mixture to cool slightly, remove the bay leaves, and transfer to a blender or food processor.
