Greek Tomato Sauce

Instructions
- 1. Heat olive oil in a large skillet or pot on medium heat. Add the onions and garlic, cooking for about 5 minutes while stirring to avoid burning.
- 2. Add the salt, pepper, oregano, basil, cinnamon, clove, bay leaves, and red pepper flakes. Stir to coat the onions and garlic, cooking for another 3 minutes.
- 3. Add the tomatoes and sugar, stir to combine, and reduce heat to low. Cook for 15-20 minutes.
- 4. Allow the mixture to cool slightly, remove the bay leaves, and transfer to a blender or food processor.
