Fresh Tomato Sauce

Instructions
- Slice the tomatoes in half and scoop out the seeds.
- Grate the cut side of each tomato half on a box grater to collect the flesh in a bowl.
- Heat olive oil in a medium pot over low heat and sauté shallot, garlic, salt, and pepper for 3 minutes.
- Add the grated tomatoes, tomato paste, balsamic vinegar, cane sugar, oregano, red pepper flakes, and basil sprig.
- Cover and simmer over low heat for 30 minutes, stirring occasionally.
- Remove and discard the basil sprig, then season to taste.
