Ingredients

Veggie Walnut Meat

  • 1 small zucchini
  • ½ cup chopped mushrooms (caps only)
  • ¼ cup sundried tomatoes (dry or in water, not oil)
  • 2 tablespoons fresh cilantro
  • 3 teaspoons chili powder
  • teaspoons cumin
  • teaspoons lemon juice
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • 1 cup raw walnuts (soaked overnight)

Roll Ingredients

  • 1 medium zucchini
  • 1 each yellow pepper
  • 1 each red pepper
  • 1 each avocado
  • to taste Chili Taco Crema
  • to taste extra cilantro (optional)
  • a few pinches sea salt (for zucchini)

Instructions

  1. Soak sundried tomatoes in hot water if using dried.
  2. Peel and slice the small zucchini, then add to a food processor.
  3. Add mushrooms, sundried tomatoes, cilantro, garlic, lemon juice, paprika, chili powder, cumin, and salt to the food processor.
  4. Top with soaked walnuts and pulse until a crumble-like texture is achieved.
  5. Transfer the mixture to a bowl and let it sit to marinate.
  6. Peel and slice the medium zucchini into thin strips, salting them to draw out moisture.
  7. Slice yellow and red peppers and avocado into matchstick-sized pieces.
  8. To assemble, wipe salt off zucchini strips, spread some walnut mixture on each strip, and layer with peppers, avocado, and cilantro.
  9. Drizzle with crema, roll up tightly, and secure with a dab of crema if needed.
  10. Serve on a plate with additional crema drizzled on top.
