Instructions
- Soak sundried tomatoes in hot water if using dried.
- Peel and slice the small zucchini, then add to a food processor.
- Add mushrooms, sundried tomatoes, cilantro, garlic, lemon juice, paprika, chili powder, cumin, and salt to the food processor.
- Top with soaked walnuts and pulse until a crumble-like texture is achieved.
- Transfer the mixture to a bowl and let it sit to marinate.
- Peel and slice the medium zucchini into thin strips, salting them to draw out moisture.
- Slice yellow and red peppers and avocado into matchstick-sized pieces.
- To assemble, wipe salt off zucchini strips, spread some walnut mixture on each strip, and layer with peppers, avocado, and cilantro.
- Drizzle with crema, roll up tightly, and secure with a dab of crema if needed.
- Serve on a plate with additional crema drizzled on top.
