Grilled Zucchini Roll-Ups

Instructions
- Discard the outermost slices of zucchini and brush the remaining slices with olive oil on both sides, then season with salt and pepper.
- Grill the zucchini slices on a preheated grill or grill pan for about 4 minutes on each side until tender.
- In a small bowl, combine ricotta cheese, parsley, basil, and lemon juice, mashing with a fork.
- Place about ½ teaspoon of the cheese mixture about ½-inch from the end of each zucchini slice, then roll it up and place on a platter. Repeat with the remaining slices.
