Grilled Zucchini Roll-Ups

Ingredients

The zucchini

  • 3 pieces zucchini

The filling

  • ¼ cup ricotta cheese
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh basil
  • ½ teaspoon lemon juice

The seasoning

  • 1 tablespoon olive oil
  • to taste Kosher salt
  • to taste black pepper

Instructions

  1. Discard the outermost slices of zucchini and brush the remaining slices with olive oil on both sides, then season with salt and pepper.
  2. Grill the zucchini slices on a preheated grill or grill pan for about 4 minutes on each side until tender.
  3. In a small bowl, combine ricotta cheese, parsley, basil, and lemon juice, mashing with a fork.
  4. Place about ½ teaspoon of the cheese mixture about ½-inch from the end of each zucchini slice, then roll it up and place on a platter. Repeat with the remaining slices.
