Ingredients

The zucchini

  • 2 medium zucchini

The seasoning

  • to taste extra-virgin olive oil
  • ¼ teaspoon garlic powder
  • to taste sea salt
  • to taste freshly ground black pepper

The garnish

  • to taste chopped fresh parsley or basil leaves
  • to taste lemon wedges

Instructions

  1. Preheat a grill or grill pan to medium heat.
  2. Slice the zucchini into ¼-inch-thick planks and place on a large plate.
  3. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper. Toss to coat.
  4. Grill the zucchini for 1 to 3 minutes per side until char marks form and it's tender but still has some bite.
  5. Remove from the grill, squeeze with lemon juice, garnish with fresh herbs, season to taste, and serve.
