Ingredients

The zucchini

  • 1 pound small zucchini

The marinade

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon minced garlic

The garnish

  • 2 tablespoons fresh parsley leaves
  • as needed none lemon wedges for serving (optional)

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, salt, pepper, Italian seasoning, and minced garlic in a large bowl.
  2. Add the zucchini to the bowl and toss to coat. Cover and refrigerate for at least 20 minutes or up to 2 hours.
  3. Preheat a grill or grill pan to medium-high heat.
  4. Place the zucchini on the grill in a single layer and cook for 3-4 minutes per side until tender and browned.
  5. Remove the zucchini from the grill and place on a serving plate. Sprinkle with parsley and serve with lemon wedges if desired.
