Lemon Garlic Grilled Zucchini

Instructions
- Prepare the zucchini by washing and slicing it into ½ inch thick slices.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, sea salt, and black pepper.
- Pour the marinade over the zucchini slices and toss to coat. Cover and marinate for at least 4 hours or overnight.
- Preheat the grill to high heat.
- Place the marinated zucchini on the grill and cook for 4 to 5 minutes on each side until grill marks appear and the zucchini is browned.
- Remove from the grill and place on a serving platter. Season with additional salt and pepper, and garnish with parsley and vegan Parmesan. Serve with lime wedges.
