Lemon Garlic Grilled Zucchini

Ingredients

The zucchini

  • 2 medium zucchinis

The marinade

  • 2 tablespoons olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 4 cloves garlic
  • ¾ teaspoon sea salt
  • ½ teaspoon freshly ground black pepper

For garnish

  • to taste chopped parsley
  • to taste lime wedges
  • to taste vegan Parmesan cheese

Instructions

  1. Prepare the zucchini by washing and slicing it into ½ inch thick slices.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, sea salt, and black pepper.
  3. Pour the marinade over the zucchini slices and toss to coat. Cover and marinate for at least 4 hours or overnight.
  4. Preheat the grill to high heat.
  5. Place the marinated zucchini on the grill and cook for 4 to 5 minutes on each side until grill marks appear and the zucchini is browned.
  6. Remove from the grill and place on a serving platter. Season with additional salt and pepper, and garnish with parsley and vegan Parmesan. Serve with lime wedges.
