Ingredients

The zucchini

  • 2 medium zucchini

The seasoning and dressing

  • ¼ cup avocado oil
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • ½ teaspoon dried thyme
  • salt to taste salt
  • pepper to taste pepper

The toppings

  • 2 tablespoons crumbled feta
  • 1 tablespoon pine nuts

Instructions

  1. Season the zucchini with salt and pepper and let it sit for 10 to 15 minutes.
  2. Brush the zucchini with half of the avocado oil.
  3. Preheat the grill or Ninja Foodi Grill to high heat.
  4. In a bowl, mix the remaining oil, lemon juice, garlic, and thyme.
  5. Grill the zucchini for 2 to 3 minutes on each side until charred.
  6. Transfer the zucchini to a plate and drizzle with the dressing.
  7. Sprinkle with feta and pine nuts, then serve.
