Instructions
- Season the zucchini with salt and pepper and let it sit for 10 to 15 minutes.
- Brush the zucchini with half of the avocado oil.
- Preheat the grill or Ninja Foodi Grill to high heat.
- In a bowl, mix the remaining oil, lemon juice, garlic, and thyme.
- Grill the zucchini for 2 to 3 minutes on each side until charred.
- Transfer the zucchini to a plate and drizzle with the dressing.
- Sprinkle with feta and pine nuts, then serve.
