Instructions
- Preheat the grill or grill pan over medium heat.
- Drizzle the zucchini, eggplant, red pepper, and scallions with olive oil and sprinkle with salt.
- Grill the vegetables until charred, about 3 minutes per side.
- Remove the vegetables from the grill and let them cool slightly before chopping into 1-inch pieces.
- In a mixing bowl, toss the chopped vegetables with cherry tomatoes, garlic, sherry vinegar, herbs de Provence, and basil.
- Season to taste and serve on toasted bread with a spread of hummus or goat cheese.
