Ingredients

The vegetables

  • 1 whole zucchini
  • 1 medium eggplant
  • 1 whole red bell pepper
  • 3 whole scallions
  • 1 cup cherry tomatoes
  • 1 clove garlic
  • 1 teaspoon sherry vinegar
  • 1 teaspoon herbs de Provence
  • ΒΌ cup fresh basil

The base

  • 8 slices good bread

The spread

  • to taste hummus or goat cheese

The seasoning

  • extra-virgin olive oil for drizzling
  • sea salt to taste

Instructions

  1. Preheat the grill or grill pan over medium heat.
  2. Drizzle the zucchini, eggplant, red pepper, and scallions with olive oil and sprinkle with salt.
  3. Grill the vegetables until charred, about 3 minutes per side.
  4. Remove the vegetables from the grill and let them cool slightly before chopping into 1-inch pieces.
  5. In a mixing bowl, toss the chopped vegetables with cherry tomatoes, garlic, sherry vinegar, herbs de Provence, and basil.
  6. Season to taste and serve on toasted bread with a spread of hummus or goat cheese.
