Ingredients

The pasta

  • ½ pound whole wheat Rotini

The vegetables

  • 1 medium zucchini
  • 1 red bell pepper
  • 1 small red onion
  • 1 small eggplant
  • 4 large tomatoes
  • 4 cloves garlic

The dressing

  • ¼ cup chopped fresh basil
  • Olive oil to taste for brushing the vegetables
  • Salt to taste
  • Pepper to taste
  • Olive oil for drizzling
  • Balsamic vinegar for drizzling

Instructions

  1. 1. Cook the pasta in salted boiling water according to package instructions, then drain and rinse with cold water.
