Ingredients

The base

  • 1 ½ cups 2% milk
  • 1 cup sugar
  • 2 large egg yolks
  • 1 cup heavy cream
  • ½ teaspoon pure vanilla extract
  • ½ teaspoon pure almond extract

The mix-ins

  • 2 cups cherries, pitted and halved or quartered
  • 1 4.5-ounce dark chocolate bar (about 1 cup shavings)

Instructions

  1. Combine milk and sugar in a saucepan and heat until bubbles form around the edges, then remove from heat.
  2. In a bowl, whisk the egg yolks and slowly add half of the hot milk mixture while whisking constantly.
  3. Return the remaining milk mixture to the stove and whisk in the egg mixture, being careful not to curdle the eggs.
  4. Add heavy cream and heat the mixture to 160°F while stirring constantly until it thickens.
  5. Remove from heat and stir in the chopped cherries, vanilla, and almond extracts.
  6. Let the custard cool, then refrigerate for several hours.
  7. Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions.
  8. Grate the chocolate and add it to the ice cream during the last few minutes of churning.
  9. Transfer the ice cream to a container and freeze for several hours before serving.
