Cherry Chocolate Ice Cream

Instructions
- Combine milk and sugar in a saucepan and heat until bubbles form around the edges, then remove from heat.
- In a bowl, whisk the egg yolks and slowly add half of the hot milk mixture while whisking constantly.
- Return the remaining milk mixture to the stove and whisk in the egg mixture, being careful not to curdle the eggs.
- Add heavy cream and heat the mixture to 160°F while stirring constantly until it thickens.
- Remove from heat and stir in the chopped cherries, vanilla, and almond extracts.
- Let the custard cool, then refrigerate for several hours.
- Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions.
- Grate the chocolate and add it to the ice cream during the last few minutes of churning.
- Transfer the ice cream to a container and freeze for several hours before serving.
