Ingredients

The base

  • 2 cups cream
  • 1 cup whole milk
  • ¾ cup sugar
  • 1 tablespoon vanilla extract
  • 1 tablespoon almond extract

The cherries

  • 2 cups frozen pitted cherries
  • ¼ cup sugar
  • 1 teaspoon almond extract

Instructions

  1. Whisk together cream, milk, ¾ cup sugar, vanilla, and 1 tablespoon almond extract.
  2. If possible, chill the mixture for a few hours.
  3. Process the mixture according to your ice cream maker's instructions.
  4. When the ice cream is about halfway done churning, chop the cherries or blend them until finely chopped.
  5. Mix the chopped cherries with the remaining ¼ cup sugar and 1 teaspoon almond extract, then chill.
  6. In the final moments of churning, add the cherry mixture to the ice cream or stir in by hand after churning.
  7. Transfer the ice cream to a freezer-safe container and freeze until firm, several hours or overnight.
