Ingredients

  • 2 lbs cherries
  • 1 cup water
  • cup sugar
  • 1 tsp fresh lemon juice

Instructions

  1. Stem the cherries and remove the pits.
  2. In a medium saucepan, combine the cherries, water, sugar, and lemon juice over medium heat and cook until the cherries are soft, about 10-15 minutes.
  3. Remove from heat and let cool to room temperature, then refrigerate until thoroughly chilled.
  4. Puree the cherry mixture and strain it through a fine sieve.
  5. Freeze the chilled mixture according to your ice cream maker's instructions.
