Instructions
- Split the apricots in half, remove the pits, and cut each half into thirds.
- Combine the apricot wedges and water in a saucepan and cook over medium heat for about 10 minutes, stirring occasionally.
- Remove from heat and stir in the sugar, then let the mixture cool to room temperature.
- Puree the mixture in a food processor or blender until smooth, straining if necessary.
- Stir in the almond or vanilla extract and chill thoroughly in the refrigerator.
- Freeze the mixture in an ice cream maker according to the manufacturer's instructions.
