Apricot Sorbet

Ingredients

  • 2 lbs fresh apricots
  • 1 cup water
  • 1 cup sugar
  • 3 drops almond or vanilla extract

Instructions

  1. Split the apricots in half, remove the pits, and cut each half into thirds.
  2. Combine the apricot wedges and water in a saucepan and cook over medium heat for about 10 minutes, stirring occasionally.
  3. Remove from heat and stir in the sugar, then let the mixture cool to room temperature.
  4. Puree the mixture in a food processor or blender until smooth, straining if necessary.
  5. Stir in the almond or vanilla extract and chill thoroughly in the refrigerator.
  6. Freeze the mixture in an ice cream maker according to the manufacturer's instructions.
