15-Minute Tom Yum Noodle Soup

Instructions
- Cook the soba or egg noodles according to the package instructions, usually about 5 minutes, then drain and rinse with cold water.
- In a small pot, bring 1¼ cups of water to a boil and add the lemongrass, kaffir lime leaves, galangal, shrimp, mushrooms, and Nam Prik Pao.
- Boil until the shrimp is cooked through, then add fish sauce and chili powder.
- Turn off the heat and stir in lime juice.
- Pour the Tom Yum soup over the noodles and garnish with cilantro leaves before serving.
