Ingredients

  • 4 cups chopped carrots
  • 3 cups chopped thawed potato waffle fries
  • 1 pound chicken breast
  • 2 cups cooked wild rice
  • a few cups organic, vine-ripened tomato sauce
  • 2 quarts organic chicken broth

Instructions

  1. Sauté the chopped carrots in coconut oil for about 10 minutes.
  2. Add the chopped potato waffle fries, cooked wild rice, tomato sauce, and chicken broth to cover the ingredients.
  3. Cover and let the stew simmer for a few hours.
  4. Add the broccoli about half an hour before the stew is done.
  5. Remove the chicken, shred it with two forks, and return it to the stew.
