Instructions
- Heat olive oil in a large sauté pan over medium heat.
- Add diced onions and a few pinches of salt, cooking until softened.
- Mix in minced garlic, harissa seasoning, salt, and diced tomatoes, cooking for an additional 5 to 7 minutes.
- Pour in chickpeas and water, bringing to a simmer.
- Cover and cook until flavors meld and chickpeas soften, about 15 to 20 minutes.
- Stir in lemon juice and adjust salt to taste.
- Serve with optional poached eggs, slivered almonds, capers, and parsley.
