Chickpea Stew (Leblebi)

Ingredients

The stew

  • ¼ cup olive oil
  • 2 cups diced yellow onion
  • to taste Kosher salt
  • 8 cloves garlic, minced
  • 1 tablespoon McCormick Gourmet Organic Harissa Seasoning
  • 8 pieces Roma tomatoes, cored and diced
  • 4 cans 15-ounce chickpeas, drained and rinsed
  • 5 cups water
  • 2 small lemons, juiced

For garnish

  • to taste poached eggs
  • to taste slivered almonds
  • to taste capers
  • to taste minced Italian parsley

Instructions

  1. Heat olive oil in a large sauté pan over medium heat.
  2. Add diced onions and a few pinches of salt, cooking until softened.
  3. Mix in minced garlic, harissa seasoning, salt, and diced tomatoes, cooking for an additional 5 to 7 minutes.
  4. Pour in chickpeas and water, bringing to a simmer.
  5. Cover and cook until flavors meld and chickpeas soften, about 15 to 20 minutes.
  6. Stir in lemon juice and adjust salt to taste.
  7. Serve with optional poached eggs, slivered almonds, capers, and parsley.
