Instructions
- 1. Prepare the galette dough by mixing flour and salt, then cutting in butter until crumbly.
- 2. Gradually add ice-cold water until a cohesive ball of dough forms, then refrigerate for 30 minutes.
- 3. Preheat the oven to 425°F.
- 4. For the filling, sauté garlic in olive oil, then add cherry tomatoes, balsamic vinegar, thyme, and salt until tomatoes burst.
- 5. Roll out the dough into a 12-inch circle and place it on a baking sheet.
- 6. Pour the cherry tomato filling into the center, leaving a 2-inch border, and fold the edges over the filling.
- 7. Bake for 25-30 minutes until golden brown, then cool for 10-15 minutes before serving.
