Instructions
- 1. Combine hemp seeds and water in a Vitamix and blend on high for 30 seconds until smooth.
- 2. Add coconut milk, honey, vanilla, and peppermint to the blender and blend until combined.
- 3. Blend in chocolate chips until they are in tiny pieces.
- 4. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
- 5. Serve once the ice cream reaches the desired consistency.
