Instructions
- Whisk together cream, milk, sugar, vanilla, and peppermint extract until the sugar is dissolved.
- Churn the mixture in an ice cream maker according to the manufacturer's instructions.
- While the ice cream is churning, melt chocolate and coconut oil together in a microwave-safe bowl, heating in 30-second intervals until smooth.
- Stir in the peppermint extract into the melted chocolate and let it cool slightly.
- Once the ice cream is done churning, transfer it to a freezer-safe container, drizzling the melted chocolate throughout and mixing slightly.
- Freeze the ice cream until firm.
