Fresh Mint Chocolate Chip Ice Cream

lightly packed mint leaves

Instructions
- Heat the cream and half and half with mint leaves until hot but not boiling, then steep for 30 minutes.
- Strain out the mint leaves and discard them.
- Whisk the egg yolks in a bowl, then slowly add the hot cream mixture while whisking constantly.
- Return the mixture to the saucepan, add sugar and salt, and cook over medium heat while stirring until it coats the back of a spoon.
- Strain the custard into a bowl and add peppermint oil if using.
- Chill the mixture until completely cold, then churn in an ice cream maker.
- Add the chocolate chips during the last few minutes of churning, then freeze until ready to serve.
