Fresh Mint Chocolate Chip Ice Cream

Ingredients

The base

  • 1 cup half and half
  • 2 cups heavy cream
  • 5 units egg yolks
  • ¾ cup sugar
  • a pinch salt
  • pure peppermint oil optional

The flavoring

  • 2 cups lightly packed mint leaves

The mix-ins

  • 1 cup chopped dark chocolate

Instructions

  1. Heat the cream and half and half with mint leaves until hot but not boiling, then steep for 30 minutes.
  2. Strain out the mint leaves and discard them.
  3. Whisk the egg yolks in a bowl, then slowly add the hot cream mixture while whisking constantly.
  4. Return the mixture to the saucepan, add sugar and salt, and cook over medium heat while stirring until it coats the back of a spoon.
  5. Strain the custard into a bowl and add peppermint oil if using.
  6. Chill the mixture until completely cold, then churn in an ice cream maker.
  7. Add the chocolate chips during the last few minutes of churning, then freeze until ready to serve.
