Spicy Curry Butternut Squash Hummus

Ingredients

  • 2 cloves garlic
  • 1 cup cooked butternut squash
  • 1 15-oz can chickpeas
  • ¼ cup fresh lemon juice
  • 2 tbsp tahini
  • 2 tbsp water
  • 1 tsp kosher salt
  • ½ tsp ground cumin
  • 2-3 tsp curry powder

Instructions

  1. Mince the garlic in a food processor.
  2. Add the remaining ingredients to the processor.
  3. Process until smooth, adjusting spices and water for desired consistency.
  4. Garnish with garam masala and olive oil if desired.
  5. Serve with pita bread, crackers, or vegetables.
