Restaurant Style Creamy Red Pepper Pasta

Instructions
- Prepare the pasta according to package instructions and set aside.
- In a large pan, heat olive oil.
- Add chopped onions, garlic, Italian seasoning, sea salt, and black pepper to the pan and sauté for about 10 minutes.
- Stir in the tomato paste and ⅓ cup of water, then turn off the heat.
- Blend the onion mixture, roasted red peppers (drained), and cashews or coconut milk in a high-speed blender until smooth and creamy.
- Pour the cooked pasta into the pan with the onion mixture and add the sauce, using tongs to coat the pasta evenly.
- Season with salt and pepper to taste, and top with fresh basil and parmesan cheese if desired.
