Ingredients

The pasta

  • 1 package gluten free pasta of choice

The sauce

  • 1 15 oz jar roasted red peppers
  • ½ cup cashews or full fat coconut milk
  • ¼ cup tomato paste
  • 1 medium onion, roughly chopped
  • 3 cloves garlic, mashed or minced
  • 2 tbsp Italian seasoning
  • 1 tsp sea salt
  • 1 tsp crushed black pepper
  • 2 tbsp olive oil
  • optional chopped fresh basil
  • optional parmesan cheese

Instructions

  1. Prepare the pasta according to package instructions and set aside.
  2. In a large pan, heat olive oil.
  3. Add chopped onions, garlic, Italian seasoning, sea salt, and black pepper to the pan and sauté for about 10 minutes.
  4. Stir in the tomato paste and ⅓ cup of water, then turn off the heat.
  5. Blend the onion mixture, roasted red peppers (drained), and cashews or coconut milk in a high-speed blender until smooth and creamy.
  6. Pour the cooked pasta into the pan with the onion mixture and add the sauce, using tongs to coat the pasta evenly.
  7. Season with salt and pepper to taste, and top with fresh basil and parmesan cheese if desired.
