Roasted Red Pepper Pasta

Ingredients

The sauce

  • ¾ cup roasted red peppers
  • 1 cup chopped yellow or sweet onion
  • 3 cloves garlic
  • 1 cup veggie broth
  • ½ cup raw cashews
  • ¼ cup rough chopped basil or parsley
  • 2 teaspoons lemon juice
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

The pasta

  • 12 ounces favorite pasta

Instructions

  1. Sauté the onion and garlic with oil or broth until the onions are caramelized.
  2. Add the sautéed mixture to a blender.
  3. Include the roasted red peppers and the remaining ingredients (except basil/parsley) into the blender.
  4. Blend on high until smooth.
  5. Add the basil/parsley and pulse to chop into the sauce.
  6. Cook the pasta according to package directions and serve with the sauce.
