Ingredients

Creamy Roasted Red Pepper Sauce

  • 3 pieces red bell peppers
  • 1 cup almond milk
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 clove garlic
  • ¼ cup tahini or almond butter

Zucchini Noodles

  • 1 tablespoon olive oil
  • 4 pieces zucchini
  • to taste salt
  • a few slices shallot or onion (optional)

Instructions

  1. Roast the bell peppers on a foil-lined baking sheet under the broiler until blackened on all sides, then cool and remove the skins, seeds, and stems.
  2. Blend the roasted bell peppers with the remaining sauce ingredients until smooth.
  3. In a skillet, heat olive oil and sauté onion until softened, then add spiralized zucchini and sauté until just tender.
  4. Add the sauce to the zucchini noodles and heat through, adjusting salt to taste.
  5. Serve immediately with desired toppings.
