Pasta with Easy Roasted Red Pepper Sauce

Ingredients

The pasta

  • 1 pound whole wheat penne pasta

The roasted red pepper sauce

  • 1 jar roasted red peppers (15.5 ounces)
  • 1 small white onion, diced
  • 4 cloves garlic, minced
  • 1 Tbsp. olive oil
  • ½ cup chicken stock (or vegetable stock)
  • 1 Tbsp. honey
  • 1 tsp. salt
  • ½ tsp. crushed red pepper
  • ¼ tsp. freshly-ground black pepper
  • ¼ cup fresh basil, roughly chopped
  • ¼ cup Parmesan cheese, shredded or grated

Optional toppings

  • to taste extra chopped fresh basil
  • to taste Parmesan cheese
  • to taste toasted pine nuts

Instructions

  1. Cook the pasta al dente in salted boiling water according to package instructions.
  2. In a blender or food processor, combine roasted red peppers, onion, and garlic, and blend until smooth.
  3. Heat olive oil in a large skillet over medium-high heat, then add the red pepper mixture and sauté for about 5 minutes until simmering.
  4. Stir in the chicken stock, honey, salt, crushed red pepper, black pepper, and basil, and let it simmer for another 5-10 minutes.
  5. Once the pasta is cooked, drain it and add it to the sauce, tossing to combine.
  6. Serve immediately, garnished with optional toppings if desired.
