One Pot Roasted Red Pepper Pasta

Instructions
- Slice the onion and mince the garlic, then slice the roasted red peppers.
- In a large pot, combine the vegetable broth, onion, garlic, red pepper slices, diced tomatoes (with juice), dried basil, crushed red pepper, and black pepper.
- Stir the ingredients and break the fettuccine in half, adding it to the pot.
- Cover the pot and bring to a boil, then reduce heat to medium-low and simmer for 10-12 minutes, stirring occasionally.
- Once the pasta is tender, remove from heat and add cream cheese in pieces, stirring until melted and smooth.
- Serve hot.
