Ingredients

The pasta

  • 16 ounces elbow noodles

The cheese sauce

  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 3 ½ cups whole milk
  • 1 ½ teaspoons sea salt
  • 1 teaspoon mustard powder
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 12 ounces grated sharp cheddar cheese
  • 4 ounces cubed American cheese
  • 4 ounces grated Swiss cheese

Instructions

  1. Preheat the oven to 350°F and grease a 9 x 13 baking dish.
  2. Boil salted water in a large pot and cook the elbow noodles according to package instructions, then drain.
  3. Melt the butter in a saucepan over medium heat and whisk in the flour, cooking for 2 to 3 minutes until it starts to brown.
  4. Add half a cup of milk and whisk until incorporated, then slowly add the remaining milk while whisking.
  5. Season the sauce with salt, mustard powder, black pepper, and cayenne pepper, and cook until the mixture thickens.
  6. Reduce heat to low and stir in part of the cheddar cheese, American cheese, and Swiss cheese until melted.
  7. Combine the cheese sauce with the cooked pasta, ensuring all noodles are coated.
  8. Transfer the mixture to the prepared baking dish and top with the remaining cheddar cheese.
  9. Cover with foil (sprayed side down) and bake for 30 minutes, then uncover and bake for an additional 15 minutes.
  10. Allow to cool for 10 minutes before serving.
