Instructions
- Preheat the oven to 350°F and grease a 9 x 13 baking dish.
- Boil salted water in a large pot and cook the elbow noodles according to package instructions, then drain.
- Melt the butter in a saucepan over medium heat and whisk in the flour, cooking for 2 to 3 minutes until it starts to brown.
- Add half a cup of milk and whisk until incorporated, then slowly add the remaining milk while whisking.
- Season the sauce with salt, mustard powder, black pepper, and cayenne pepper, and cook until the mixture thickens.
- Reduce heat to low and stir in part of the cheddar cheese, American cheese, and Swiss cheese until melted.
- Combine the cheese sauce with the cooked pasta, ensuring all noodles are coated.
- Transfer the mixture to the prepared baking dish and top with the remaining cheddar cheese.
- Cover with foil (sprayed side down) and bake for 30 minutes, then uncover and bake for an additional 15 minutes.
- Allow to cool for 10 minutes before serving.
