Instructions
- Soak the beans overnight in a large bowl with enough water to cover them twice.
- Drain and rinse the beans before cooking.
- Sauté minced garlic and diced onion in coconut oil until soft.
- Add diced carrots and celery to the pot and sauté until softened.
- Add the beans and water to the pot, bring to a boil, then reduce heat and simmer for 90 minutes.
- After simmering, add diced tomatoes, cumin, oregano, smoked paprika, cayenne pepper, and parsley to the pot.
- Simmer for an additional 20 minutes.
- Season with salt and stir in apple cider vinegar before serving.
