Ingredients

The Bowl

  • 1 cup dry lentils
  • 1 cup brown basmati rice
  • 1 head cauliflower
  • 1 medium onion (optional)
  • 2–3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 tablespoon curry powder
  • 3 cups grated carrots
  • ½ cup chopped cilantro
  • 3 scallions thinly sliced
  • 2 cups leafy greens (baby spinach, kale, or arugula)

Turmeric Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons maple syrup
  • ½ teaspoon turmeric
  • ½ teaspoon kosher salt
  • ½ teaspoon cracked pepper
  • 1 pinch cayenne

Garnishes

  • to taste microgreens
  • to taste sunflower seeds or pumpkin seeds

Instructions

  1. Preheat the oven to 425°F.
  2. Cook the rice and lentils in separate pots according to package directions.
  3. Cut the cauliflower into small florets and slice the onion thinly. Toss with olive oil, salt, and curry powder, then roast for 25-30 minutes until tender.
  4. Grate the carrots and toss with cilantro and scallions.
  5. Mix the dressing ingredients together in a bowl.
  6. Once the lentils are cooked, add cumin, coriander, and a drizzle of olive oil. Season the rice with salt and pepper.
  7. Assemble the bowls by dividing the lentils, rice, and roasted cauliflower. Add the leafy greens, top with slaw, and drizzle with dressing. Add garnishes as desired.
