Instructions
- Preheat the oven to 425°F.
- Cook the rice and lentils in separate pots according to package directions.
- Cut the cauliflower into small florets and slice the onion thinly. Toss with olive oil, salt, and curry powder, then roast for 25-30 minutes until tender.
- Grate the carrots and toss with cilantro and scallions.
- Mix the dressing ingredients together in a bowl.
- Once the lentils are cooked, add cumin, coriander, and a drizzle of olive oil. Season the rice with salt and pepper.
- Assemble the bowls by dividing the lentils, rice, and roasted cauliflower. Add the leafy greens, top with slaw, and drizzle with dressing. Add garnishes as desired.
