Instructions
- Cook lentils in boiling salted water until tender, then drain and season with salt, cumin, olive oil, chili flakes, and lemon juice.
- While lentils cook, prepare the Tahini Sauce.
- Cut or shred the vegetables into small pieces.
- Assemble the bowls by placing lentils in a bowl and topping with greens, veggies, herbs, and optional additions.
- Drizzle with tahini sauce and sprinkle with seeds or nuts.
