Ingredients

Cookie Dough

  • 2 and 1/4 cups heat-treated all-purpose flour
  • 2 and 1/4 teaspoons cornstarch
  • 3/4 teaspoon salt
  • 3/4 cup unsalted butter
  • 1 cup packed light or dark brown sugar
  • 1/3 cup pasteurized egg whites
  • 2 teaspoons pure vanilla extract
  • 1 cup mini semi-sweet chocolate chips

Cupcakes

  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup whole milk
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/3 cup pasteurized egg whites
  • 2 teaspoons pure vanilla extract

Cookie Dough Buttercream

  • 1 cup unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon heavy cream or milk
  • 1 teaspoon salt
  • 3 cups confectioners’ sugar
  • remaining cookie dough

Instructions

  1. Prepare the cookie dough by whisking together the heat-treated flour, cornstarch, and salt, then beating the butter and brown sugar until fluffy before adding egg whites and vanilla.
  2. Incorporate the flour mixture and fold in chocolate chips, then refrigerate the dough.
  3. Preheat the oven and prepare a muffin pan with liners.
  4. Make the cupcake batter by whisking dry ingredients and mixing wet ingredients separately, then combining them.
  5. Fill cupcake liners and bake until golden brown, then cool slightly.
  6. Press a chilled cookie dough ball into the center of each cupcake.
  7. Prepare the buttercream by beating the butter until fluffy, then adding vanilla, milk, salt, and confectioners’ sugar, mixing until light and fluffy.
  8. Incorporate cookie dough chunks into the buttercream.
  9. Frost the cooled cupcakes and decorate as desired.
