Lunch Nachos With Spiced Cauliflower

Ingredients

Vegetables and Seasoning

  • 1 cup thinly sliced radishes, red onion, cabbage, carrots, or other firm vegetable
  • ½ cup seasoned rice vinegar
  • 2 Tbsp. extra-virgin olive oil
  • 2 cloves garlic
  • ½ small head cauliflower
  • 1 tsp. ground coriander
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • to taste Kosher salt

Main Ingredients

  • 8 oz. tortilla chips
  • 1 cup refried beans
  • 8 oz. sharp cheddar

For Serving

  • to taste chopped avocado
  • to taste cilantro leaves with tender stems
  • to taste plain yogurt

Instructions

  1. Combine radishes and vinegar in a small bowl and set aside.
  2. Preheat the oven to 400°F. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Cook garlic until golden, then add cauliflower and cook until browned and crisp-tender.
  3. Add spices and remaining oil to the skillet, cooking until fragrant. Season with salt.
  4. Layer half of the chips on a baking sheet, followed by half of the cauliflower, beans, and cheese. Repeat the layers.
  5. Bake until cheese is melted, about 10-12 minutes. Top with drained radishes, avocado, cilantro, and yogurt.
