Lunch Nachos With Spiced Cauliflower

Instructions
- Combine radishes and vinegar in a small bowl and set aside.
- Preheat the oven to 400°F. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Cook garlic until golden, then add cauliflower and cook until browned and crisp-tender.
- Add spices and remaining oil to the skillet, cooking until fragrant. Season with salt.
- Layer half of the chips on a baking sheet, followed by half of the cauliflower, beans, and cheese. Repeat the layers.
- Bake until cheese is melted, about 10-12 minutes. Top with drained radishes, avocado, cilantro, and yogurt.
