Cauliflower Nachos

Ingredients

  • 1 large head Cauliflower
  • ¼ cup Avocado oil
  • 1 lb Ground turkey sausage
  • 7 tsp Taco seasoning
  • 1 cup Cheddar cheese
  • ¾ cup Tomatoes
  • cup Red onion
  • ½ medium Avocado
  • 2 tbsp Fresh cilantro

Instructions

  1. Preheat the oven to 425°F (218°C) and grease a baking sheet.
  2. Slice the cauliflower into thin chips.
  3. Toss the cauliflower chips with avocado oil and 1 teaspoon of taco seasoning.
  4. Arrange the chips on the baking sheet and roast for about 20 minutes until crispy.
  5. While the cauliflower is roasting, brown the ground turkey sausage in a skillet for 10-12 minutes, adding the taco seasoning.
  6. After roasting, flip the cauliflower chips and top with the turkey sausage, red onion, tomatoes, and cheese.
  7. Return to the oven for 5 minutes until the cheese melts.
  8. Garnish with diced avocado and fresh cilantro before serving.
