Instructions
- Preheat the oven to 425°F (218°C) and grease a baking sheet.
- Slice the cauliflower into thin chips.
- Toss the cauliflower chips with avocado oil and 1 teaspoon of taco seasoning.
- Arrange the chips on the baking sheet and roast for about 20 minutes until crispy.
- While the cauliflower is roasting, brown the ground turkey sausage in a skillet for 10-12 minutes, adding the taco seasoning.
- After roasting, flip the cauliflower chips and top with the turkey sausage, red onion, tomatoes, and cheese.
- Return to the oven for 5 minutes until the cheese melts.
- Garnish with diced avocado and fresh cilantro before serving.
