Ingredients

Avocado Crema

  • 1 large avocado
  • ½ lime juice
  • ¼ cup cilantro leaves
  • ½ cup water
  • to taste Kosher salt

Cauliflower

  • 1 (2-lb) head of cauliflower, cut into small florets
  • 2 teaspoons avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • ¼ teaspoon oregano
  • to taste Kosher salt
  • cup water

Taco Assembly

  • to taste corn tortillas
  • to taste limes
  • to taste cilantro leaves, as garnish
  • to taste cotija cheese, as garnish
  • to taste sliced radishes

Instructions

  1. Prepare the avocado crema by blending avocado, lime juice, cilantro, water, and salt until smooth.
  2. Cut the cauliflower into florets and heat avocado oil in a skillet over medium-high heat.
  3. Add the cauliflower to the skillet and cook until lightly browned on each side.
  4. Mix garlic powder, onion powder, paprika, cumin, oregano, and salt, then coat the cauliflower with the spice mixture.
  5. Pour in water, cover the pan, and reduce heat to medium-low. Cook for 5 minutes.
  6. Taste the cauliflower and adjust salt if necessary.
  7. Blister the tortillas over an open flame, then assemble the tacos with cauliflower, avocado crema, green onions, cilantro, radishes, and cotija cheese.
