Instructions
- Preheat the oven to 425°F and prepare a baking sheet with cauliflower florets, olive oil, and salt.
- Roast the cauliflower for 30 minutes, tossing halfway through for even browning.
- In a bowl, combine cabbage, carrot, cilantro, lime juice, maple syrup, and salt to make the slaw.
- In a blender, combine milk, peanut butter, prunes, soy sauce, lime juice, maple syrup, ginger, sriracha, and water; blend until smooth.
- Warm the tortillas and assemble the tacos by layering roasted cauliflower, slaw, peanut sauce, green onions, and peanuts.
