Bangin' Cauliflower Tacos

Ingredients

The tacos

  • 1 medium head cauliflower, chopped into florets
  • 2 tbsp extra virgin olive oil
  • ½ tsp fine sea salt
  • 8 tortillas of choice
  • to taste chopped green onions and peanuts, for garnish

The cabbage slaw

  • 3 cups shredded red cabbage
  • ½ cup shredded carrot
  • cup cilantro, chopped
  • 2 tbsp lime juice
  • 2 tsp pure maple syrup
  • heaping ¼ tsp fine sea salt

The prune peanut sauce

  • ½ cup unsweetened non-dairy milk
  • 4 California grown prunes
  • cup natural salted peanut butter
  • 3 tbsp reduced sodium soy sauce
  • 1 tbsp fresh lime juice
  • ½ tbsp maple syrup
  • 1 tsp sriracha
  • 1 tsp minced ginger

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with cauliflower florets, olive oil, and salt.
  2. Roast the cauliflower for 30 minutes, tossing halfway through for even browning.
  3. In a bowl, combine cabbage, carrot, cilantro, lime juice, maple syrup, and salt to make the slaw.
  4. In a blender, combine milk, peanut butter, prunes, soy sauce, lime juice, maple syrup, ginger, sriracha, and water; blend until smooth.
  5. Warm the tortillas and assemble the tacos by layering roasted cauliflower, slaw, peanut sauce, green onions, and peanuts.
