Instructions
- Preheat the oven to 400°F.
- Place the cauliflower and cabbage on a large sheet pan and drizzle with olive oil, then sprinkle with cumin, coriander, and salt.
- Mix the vegetables together and spread them out in an even layer.
- Roast the vegetables, stirring every 15 minutes, until softened and browned, about 45 minutes.
- While the vegetables are roasting, make the avocado sauce.
- Assemble the tacos by filling the warmed tortillas with the avocado sauce, roasted vegetables, and any additional toppings.
