Roasted Cauliflower Tacos

Ingredients

The vegetables

  • 1 small cauliflower
  • 1 pound red cabbage

The spices and oil

  • ¼ cup extra-virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon kosher salt

For serving

  • 1 recipe Avocado Sauce
  • 12 pieces corn tortillas
  • to taste thinly sliced radishes
  • to taste sliced serrano peppers
  • to taste avocado slices
  • to taste cilantro

Instructions

  1. Preheat the oven to 400°F.
  2. Place the cauliflower and cabbage on a large sheet pan and drizzle with olive oil, then sprinkle with cumin, coriander, and salt.
  3. Mix the vegetables together and spread them out in an even layer.
  4. Roast the vegetables, stirring every 15 minutes, until softened and browned, about 45 minutes.
  5. While the vegetables are roasting, make the avocado sauce.
  6. Assemble the tacos by filling the warmed tortillas with the avocado sauce, roasted vegetables, and any additional toppings.
