Cauliflower Cheddar Soup

Ingredients

The soup

  • 1 head cauliflower
  • 1 small sweet potato
  • 2 medium shallots
  • 2 cloves garlic
  • 2 tablespoons butter or olive oil
  • 1 quart chicken broth or vegetable broth
  • 1 cup grated sharp cheddar
  • 1 teaspoon dried thyme
  • 1 1/2 teaspoon black pepper
  • 1 teaspoon sea salt
  • 1 1/2 teaspoon dijon mustard

Optional topping

  • 1 clove garlic
  • 2 pieces bread
  • 2 tablespoons butter or oil
  • to taste salt and pepper
  • to taste fresh parsley, minced

Instructions

  1. Sauté shallots and garlic in butter or olive oil for 5 minutes over medium-low heat.
  2. Add cauliflower, sweet potato, thyme, salt, pepper, and broth. Simmer for 25-30 minutes until vegetables are fork-tender.
  3. If desired, remove a cup of the veggies, then blend the remaining soup until smooth.
  4. Return the blended soup to the pot, add cheese and dijon, stirring to melt the cheese.
  5. Adjust consistency with more broth or milk if needed, and serve.
