Cauliflower Cheddar Soup

Instructions
- Sauté shallots and garlic in butter or olive oil for 5 minutes over medium-low heat.
- Add cauliflower, sweet potato, thyme, salt, pepper, and broth. Simmer for 25-30 minutes until vegetables are fork-tender.
- If desired, remove a cup of the veggies, then blend the remaining soup until smooth.
- Return the blended soup to the pot, add cheese and dijon, stirring to melt the cheese.
- Adjust consistency with more broth or milk if needed, and serve.
