Cauliflower Cheese Soup

Ingredients

  • 4 cups Cauliflower (cut into florets)
  • 4 cloves Garlic (minced)
  • 3 ½ cups Chicken broth (reduced sodium)
  • 1 cup Heavy cream
  • 3 cups Cheddar cheese (shredded)

Instructions

  1. 1. Sauté minced garlic in a dutch oven over medium heat until fragrant.
  2. 2. Add chicken broth, heavy cream, and chopped cauliflower; bring to a boil, then simmer until the cauliflower is tender.
  3. 3. Remove about 1/3 of the cauliflower pieces and set aside.
  4. 4. Use an immersion blender to puree the soup with the remaining cauliflower.
  5. 5. Reduce heat to low and add shredded cheddar cheese ½ cup at a time, stirring until melted and smooth.
  6. 6. Add the reserved cauliflower florets back into the pureed soup.
