Cauliflower Cheese Soup

Instructions
- 1. Sauté minced garlic in a dutch oven over medium heat until fragrant.
- 2. Add chicken broth, heavy cream, and chopped cauliflower; bring to a boil, then simmer until the cauliflower is tender.
- 3. Remove about 1/3 of the cauliflower pieces and set aside.
- 4. Use an immersion blender to puree the soup with the remaining cauliflower.
- 5. Reduce heat to low and add shredded cheddar cheese ½ cup at a time, stirring until melted and smooth.
- 6. Add the reserved cauliflower florets back into the pureed soup.
