Ingredients

  • 1.5 lb chicken thighs, boneless and skinless
  • 2 tsp adobo, all-purpose seasoning
  • 2 Tbsp cooking oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, finely chopped
  • ½ cup sofrito
  • 8 oz tomato sauce
  • 1 packet sazón seasoning with annatto
  • 2 bay leaves
  • 2 tsp dried oregano
  • ¼ cup manzanilla olives, pimiento-stuffed
  • 1 large potato, diced (about 1 cup)
  • 2 large carrots, sliced (about 1 cup)
  • 3 cups chicken stock

Instructions

  1. Dry and cut the chicken thighs into cubes, then season with adobo.
  2. Heat oil in a Dutch oven and brown the chicken, then set aside.
  3. Cook the onion until translucent, then add garlic and cook until fragrant.
  4. Add sofrito and tomato sauce, cooking until thick and bubbly.
  5. Stir in sazón, bay leaves, oregano, olives, potatoes, carrots, and chicken stock, then bring to a boil.
  6. Return the chicken to the pot, lower the heat, cover, and simmer for 40-50 minutes until cooked through.
  7. Taste and adjust seasoning, then remove bay leaves before serving.
