Instructions
- Dry and cut the chicken thighs into cubes, then season with adobo.
- Heat oil in a Dutch oven and brown the chicken, then set aside.
- Cook the onion until translucent, then add garlic and cook until fragrant.
- Add sofrito and tomato sauce, cooking until thick and bubbly.
- Stir in sazón, bay leaves, oregano, olives, potatoes, carrots, and chicken stock, then bring to a boil.
- Return the chicken to the pot, lower the heat, cover, and simmer for 40-50 minutes until cooked through.
- Taste and adjust seasoning, then remove bay leaves before serving.
