The chicken

chicken thighs (boneless and skinless)
The marinade

olive oil

fresh orange juice

achiote powder (or paprika)

Instructions
- Combine chicken thighs and all marinade ingredients in a large bowl and toss to coat.
- Heat olive oil in a large nonstick skillet over medium heat.
- Add the seasoned chicken to the skillet once the oil is hot.
- Cook the chicken for 5 minutes, then flip it carefully.
- Cook for another 5 minutes.
- Reduce heat to medium-low and continue cooking, flipping occasionally, until the chicken reaches an internal temperature of 165°F.
- Remove the chicken from the pan and top with fresh herbs if desired before serving.
