Ingredients

The chicken

  • 2 pounds chicken thighs (boneless and skinless)

The marinade

  • 2 tablespoons olive oil
  • cup fresh orange juice
  • 3 tablespoons lime juice
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 2 teaspoons minced garlic
  • 1 teaspoon onion powder
  • 2 teaspoons achiote powder (or paprika)
  • 2 teaspoons oregano
  • 1 teaspoon cumin

Instructions

  1. Combine chicken thighs and all marinade ingredients in a large bowl and toss to coat.
  2. Heat olive oil in a large nonstick skillet over medium heat.
  3. Add the seasoned chicken to the skillet once the oil is hot.
  4. Cook the chicken for 5 minutes, then flip it carefully.
  5. Cook for another 5 minutes.
  6. Reduce heat to medium-low and continue cooking, flipping occasionally, until the chicken reaches an internal temperature of 165°F.
  7. Remove the chicken from the pan and top with fresh herbs if desired before serving.
