Ingredients

The pasta

  • 10 oz tortellini

The sauce

  • 1 tablespoon olive oil
  • 2 tablespoons sun-dried tomatoes oil
  • 4 oz shrimp, shelled but tail-on
  • ¼ cup sun-dried tomatoes, sliced
  • 2 cloves garlic, minced
  • ½ cup whipping cream
  • ½ cup chicken broth
  • ¼ teaspoon paprika
  • 1 pinch salt
  • 1 pinch sugar
  • 3 dashes ground black pepper
  • to taste chopped parsley leaves

Instructions

  1. 1. Boil the tortellini according to the package instructions, then drain and set aside.
  2. 2. Heat a skillet over medium heat and add the olive oil and sun-dried tomato oil.
  3. 3. Sauté the garlic for a minute before adding the shrimp.
  4. 4. Cook the shrimp until almost done, then add the whipping cream, chicken broth, paprika, salt, sugar, and black pepper.
  5. 5. Bring the sauce to a simmer and then add the tortellini, stirring to combine.
  6. 6. Add the parsley and serve immediately.
