Ingredients

The dough

  • 1 cup whole wheat flour
  • 2 ¼ cups bread flour
  • 1 ⅓ tsp salt
  • ¾ Tbsp active dry or instant yeast
  • 1 ¼ cups warm water

Add-ins

  • cup pitted kalamata olives
  • 1 tsp dry thyme

For baking

  • 2 Tbsp cornmeal

Instructions

  1. Combine the dry ingredients in a large pot or bowl and stir until evenly mixed.
  2. Chop the olives and add them along with warm water to the dry mixture, stirring until moistened.
  3. If the dough is not cohesive, add more water gradually until it forms a ball.
  4. Cover the bowl loosely and let the dough sit at room temperature for 2 hours.
  5. After resting, sprinkle flour on the dough and your hands, then shape it into a smooth ball.
  6. Prepare a baking sheet with parchment or foil and sprinkle with cornmeal, placing the dough on it.
  7. Let the dough rise for 1 to 1.5 hours until it has doubled in size.
  8. Preheat the oven to 425 degrees Fahrenheit. Make shallow slashes on the dough's surface.
  9. Brush the dough with water and bake for 30 minutes.
  10. Allow the bread to cool on a wire rack before slicing.
