Squash, Greens + Quinoa Fritters

Ingredients

The fritters

  • 1 cup uncooked quinoa
  • 14 oz butternut squash
  • 4 medium eggs
  • 1 small bunch green onions
  • 5 oz fresh greens (kale, spinach, etc.)
  • cup rolled oats
  • ¾ tsp ground cumin
  • ¼ tsp cayenne
  • to taste sea salt and fresh ground pepper
  • 7 oz feta cheese
  • 1 unwaxed lemon
  • handful chopped parsley and cilantro
  • for cooking oil olive or grapeseed oil

The yogurt sauce

  • 1 cup plain, full fat, greek yogurt
  • to taste sea salt
  • 1 tsp sumac or dried chile
  • optional grated garlic clove and chopped cilantro and parsley

To serve

  • to taste english cucumber, sliced super thin
  • to taste baby tomatoes
  • to taste soft salad greens
  • to taste olives

Instructions

  1. Rinse the quinoa and cook it with water until absorbed, adding shredded squash in the last few minutes to steam.
  2. Beat the eggs in a mixing bowl and add green onions, greens, oats, cumin, cayenne, salt, and pepper.
  3. Mix in the feta, lemon zest, herbs, and the cooled quinoa/squash mixture, then chill in the fridge.
  4. Prepare the yogurt sauce by mixing yogurt, lemon juice, salt, and sumac, adding herbs if desired.
  5. Slice and prepare cucumber, tomato, and olives, tossing them in oil and lemon juice if desired.
  6. Heat oil in a pan and form patties from the quinoa mixture, frying until golden brown on both sides.
