The yogurt sauce

Instructions
- Rinse the quinoa and cook it with water until absorbed, adding shredded squash in the last few minutes to steam.
- Beat the eggs in a mixing bowl and add green onions, greens, oats, cumin, cayenne, salt, and pepper.
- Mix in the feta, lemon zest, herbs, and the cooled quinoa/squash mixture, then chill in the fridge.
- Prepare the yogurt sauce by mixing yogurt, lemon juice, salt, and sumac, adding herbs if desired.
- Slice and prepare cucumber, tomato, and olives, tossing them in oil and lemon juice if desired.
- Heat oil in a pan and form patties from the quinoa mixture, frying until golden brown on both sides.
