Quinoa Fritters

Ingredients

  • 3 cups cooked quinoa
  • 1 cup all purpose flour or gluten free flour blend
  • 1 cup cheddar cheese, shredded
  • ½ cup chopped onion
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon chopped parsley
  • 5 large eggs, beaten
  • as needed none oil for cooking

Instructions

  1. Combine cooled quinoa with flour, cheese, onion, salt, pepper, and parsley in a large bowl.
  2. Lightly beat the eggs in a small bowl and add them to the quinoa mixture.
  3. Heat oil in a skillet over medium heat.
  4. Form the quinoa mixture into balls or ovals and carefully add them to the hot oil.
  5. Cook for 3–5 minutes per side until a golden crust forms.
  6. Drain on paper towels or cool on a wire rack.
  7. Serve with ketchup or your desired dipping sauce.
