Baked Quinoa Patties

Ingredients

The base

  • 2 ½ cups cooked quinoa
  • 5 large eggs
  • ½ teaspoon fine-grain sea salt

The herbs and vegetables

  • cup finely chopped fresh chives
  • cup finely chopped fresh dill
  • 1 cup finely chopped kale
  • 1 medium yellow or white onion, finely chopped
  • 3 cloves garlic, finely chopped

The seasoning and binding

  • 1 teaspoon toasted cumin
  • 1 teaspoon baking powder
  • 1 cup bread crumbs
  • cup crumbled feta
  • 1 tablespoon extra-virgin olive oil or clarified butter
  • sesame seeds for coating

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a medium bowl, combine the cooked quinoa, eggs, and salt.
  3. Stir in the chives, dill, kale, onion, garlic, and cumin.
  4. Add the baking powder and bread crumbs, mix, and let sit for a few minutes.
  5. Gently fold in the feta cheese.
  6. Form the mixture into twelve 1-inch thick patties.
  7. Oil a baking sheet and arrange the patties with space between them.
  8. Sprinkle sesame seeds on top if desired.
  9. Bake for about 20 minutes until the bottoms are brown, then flip and bake for another 5 minutes.
