Quinoa Cauliflower Patties

Instructions
- Rinse the quinoa and combine it with 2 cups of water in a pot. Bring to a boil, add salt and pepper, then simmer covered for 15 minutes.
- Fluff the quinoa with a fork and let it rest with the lid ajar.
- Pulse the cauliflower in a food processor until it resembles couscous.
- In a large bowl, whisk the eggs and add the cauliflower.
- In the food processor, pulse the scallions and oats, then add to the egg and cauliflower mixture.
- Stir in the cooked quinoa, salt, pepper, feta, lemon zest, and parsley, then mix well.
- Refrigerate the mixture for 30 minutes.
- Heat ghee in a skillet over medium-high heat and form the mixture into patties.
- Cook the patties for about 4 minutes on each side until crisp, covering them after flipping.
