Quinoa Cauliflower Patties

Ingredients

The patties

  • 1 cup quinoa
  • cups cauliflower florets
  • 4 large eggs
  • 6 pieces scallions
  • ¾ cup rolled oats
  • 1⅓ cups sheep's milk feta
  • zest of 1-2 large lemons
  • ½ cup flat leaf parsley, roughly chopped
  • ghee for cooking

Seasoning

  • to taste sea salt
  • to taste pepper

Instructions

  1. Rinse the quinoa and combine it with 2 cups of water in a pot. Bring to a boil, add salt and pepper, then simmer covered for 15 minutes.
  2. Fluff the quinoa with a fork and let it rest with the lid ajar.
  3. Pulse the cauliflower in a food processor until it resembles couscous.
  4. In a large bowl, whisk the eggs and add the cauliflower.
  5. In the food processor, pulse the scallions and oats, then add to the egg and cauliflower mixture.
  6. Stir in the cooked quinoa, salt, pepper, feta, lemon zest, and parsley, then mix well.
  7. Refrigerate the mixture for 30 minutes.
  8. Heat ghee in a skillet over medium-high heat and form the mixture into patties.
  9. Cook the patties for about 4 minutes on each side until crisp, covering them after flipping.
