Instructions
- Combine quinoa, eggs, cayenne pepper, salt, and pepper in a medium bowl.
- Stir in chives, onion, Parmesan, and garlic.
- Add breadcrumbs and mix until well combined; let sit for a few minutes.
- Form the mixture into small patties.
- Heat avocado oil in a large skillet over medium-low heat.
- Add patties to the skillet without overcrowding and cover.
- Cook for 8 to 10 minutes until the bottom is golden brown, then flip and cook for 7 more minutes.
- Allow patties to cool on a wire rack.
