30-Minute Quinoa Patties

Ingredients

  • 2 ½ cups cooked quinoa
  • 4 large eggs (or flax eggs)
  • ¼ teaspoon cayenne pepper or Chipotle Chili Powder (optional)
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • cup fresh chives (or parsley)
  • 1 medium onion (chopped fine)
  • cup fresh Parmesan (or ¼ cup Nutritional Yeast and 2 tablespoons vegan cheese)
  • 1 tablespoon garlic (minced)
  • 1 cup breadcrumbs (gluten free)
  • 2 tablespoons avocado oil (for cooking)

Instructions

  1. Combine quinoa, eggs, cayenne pepper, salt, and pepper in a medium bowl.
  2. Stir in chives, onion, Parmesan, and garlic.
  3. Add breadcrumbs and mix until well combined; let sit for a few minutes.
  4. Form the mixture into small patties.
  5. Heat avocado oil in a large skillet over medium-low heat.
  6. Add patties to the skillet without overcrowding and cover.
  7. Cook for 8 to 10 minutes until the bottom is golden brown, then flip and cook for 7 more minutes.
  8. Allow patties to cool on a wire rack.
