Instructions
- Combine quinoa, eggs, salt, and lemon pepper in a large bowl.
- Stir in parsley, onion, cheese, and garlic.
- Mix in breadcrumbs, chopped carrot, and zucchini, then let sit for a few minutes.
- Form the mixture into about 20 patties.
- Heat oil in a skillet over medium-low heat and cook 5-6 patties at a time for 7-10 minutes until browned.
- Flip the patties and cook the other side for about 5 minutes until golden.
- Remove from skillet and cool on a plate while cooking remaining patties.
- Serve plain or with various accompaniments like pita, salad, or hot sauce.
